World-Class Craft

Originally from Pignola in southern Italy, Giancarlo Mancino has become one of the world’s most celebrated bartenders, earning global recognition for shaping modern cocktail culture and creating unforgettable beverage experiences.

Beyond consulting, Giancarlo is the creator of Mancino Vermouth and Rinomato Aperitivo, founder of the bottled cocktail brand Bocktailed, and the creative force behind the luxury sparkling cocktail line Sei Bellissimi. His work continues to influence bars and restaurants around the world.

The Menu

This new cocktail program transforms Yaamava' Resort & Casino's exceptional wine and spirits collection into an experience that celebrates both the resort’s legacy and its future as a premier culinary destination. Served at The Pines Modern Steakhouse, the menu is divided into three distinctive collections: 

• The 86 Collection: A showcase of rare wines and spirits from the 1970s and 1980s, featuring iconic cocktails built around historic bottles for a truly one-of-a-kind taste of the past.
   
• From Grape to Glass: Inspired by California’s legendary wine regions, these cocktails highlight the character of the Golden State’s vineyards. The menu rotates every six months, featuring new producers and fresh interpretations. 
  
  Twists on Classics: Steakhouse favorites, reimagined. Familiar cocktails are elevated with unexpected ingredients, refined techniques, and bold new flavors.

With this innovative program, Yaamava’ continues to raise the bar, delivering a sophisticated cocktail experience that blends history, craftsmanship, and world-class hospitality in the heart of Southern California.
